Please Try This Amazing Butter Chicken Recipe

If you have one recipe to keep in your cookbook to impress your guests, THIS IS THE ONE. I decided to try this recipe because my friend has a farm and had to kill some chickens... It turned out he had too much of them so we decided to make the most out of the situation. People say "When life give you lemons, make lemonade"!
Here is the secret ingredient.... Spice Trecker's Garam Masala!! Those spices are not grounded so when it's time to use them you get a better flavour than the pre-grinded ones.
INGREDIENTS

Marinade
1.5 lb / 750 g chicken thigh fillets, cut into bite size pieces
½ cup plain yoghurt
1 tbsp lemon juice
1 tsp tumeric powder
2 tsp garam masala
½ tsp pepper flakes
1 tsp ground cumin
1 tbsp fresh grated ginger
2 garlic cloves, crushed
Curry
1 tbsp vegetable oil or ghee
1 cup tomato passata or puree
1 tbsp sugar
1 cup cream (I used 35%, but you could use a lighter one)
To serve
Rice
Cilantro (optional)
Lime quarters

PREPARATION
Combine the Marinade ingredients with the chicken in a bowl. Cover and refrigerate overnight, or up to 24 hours.
Heat the vegetable oil over high heat in a large fry pan. Add the chicken coated in the Marinade and cook for around 3 minutes, or until the chicken is white all over.
Add the tomato passata, sugar and salt. Turn down to low and simmer for 20 minutes.
Stir through the cream, then remove from heat.
Garnish with coriander/cilantro leaves if using. Serve with basmati rice.
Recipe adapted from Nagi's Recipe on RecipeTin Eats Blog. I took out the salt as this recipe is already soooo tasty! And I didn't have any cayenne pepper, and pepper flakes look (and taste) great.
